Crunchy Oatmeal Cookies

This is a delicious oatmeal cookie recipe from my mom. I've made it twice during the past couple of months, and they are delicious! This time around I added raisins, but last time I just made them plain. The raisins make them more lumpy and thick--without the raisins these cookies are very flat.

Anyway, here's the recipe. Prepare for deliciousness!

Oatmeal Cookies
Preheat oven to 375 degrees
Cream together:
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 large eggs
1 teas. vanilla
1 teas. salt
1 teas. soda
1 ¼ cup flour
Stir in: 4 cups oatmeal
Divide dough into three portions and roll into 12 balls for each portion, so that you get three dozen equally sized balls. Lay these 12 at a time onto a greased cookie sheet and bake about 12 or 13 minutes until done. The cookies will flatten out. Let them cool about 5 minutes before carefully removing from cookie sheet onto cooling rack with a pancake turner. You have to lift them up carefully while they’re hot or they’ll break, but once they cool completely they aren’t fragile anymore. While warm, you can repair them if they bend or break while transferring them to cookie sheet and they’ll harden up and be fine.

those cookies look so tasty. i wonder if you could use chocolate chips instead of raisins? yumm!
